Sous Vide Egg Bites

So for Christmas I finally got a sous vide set up!  After much research I had decided on the Anova Precision Cooker.   Why did I decide on this one?  Great reviews, a good stable app, it also works with Google Home, WiFi and Bluetooth (remember I’m a geek!) and it has more than enough capacity for our uses here at home.  The sale on boxing day also didn’t hurt it’s chances with me.

I’ve spent some time toying with it, regrettably not enough; but free time is limited in my life.  Steak has been a popular sous vide item so far but I wanted to try these little egg bites that I’ve seen around.

I understand that these egg bites are a Starbucks invention and I’m probably late to the game here. I hadn’t eaten one before making them myself so I cannot particularly say how close these are to the original.   I looked at a lot of recipes online and ended up deciding on a basic starting point of equal parts heavy cream to eggs, with some salt for seasoning.

So equal parts egg and 35% cream, some seasoning and I used my immersion blender to make sure it was all very well incorporated.  I had cleaned and sterilized six 125ml canning jars.

The Anova was set to 185°F and I let it come up to temperature.

Once the water bath was up to temperature I filled the mason jars with the egg mixture up to the first line. I then sealed the jars just finger tight before adding them to the water.

They were left to cook for 25mintues.  After 25 minutes I removed them from the water, pro tip having a set of the mason jar lifters would be VERY helpful for this. Even with my hands that are accustom to handling hot items, this was uncomfortable.

These were so incredibly, delightfully creamy right after cooking.  I chilled them in the fridge and for a quick morning snack, remove the lids and place in the microwave for 30-45 seconds.  Not as good reheated but still a healthy, tasty and very quick breakfast on the way out the door in the morning.

These were very good topped with cheese, cherry tomatoes and some fresh Chervil.

I do believe I’ll keep experimenting with these, the husband officially requests meat to be added. Preferably bacon.
